Students experienced working with some of Cornwall’s top chefs at the Fish Festival, part of the Fal River Festival.
Catering students from both Truro and Penwith Colleges had the opportunity to learn about fish and filleting, opening oysters and preparation for various fish dishes. They were also involved in the fish auction at the end of each day by holding a variety of slippery fish in the air for auction and then watching them filleted for the table.
