VTCT Level 3 Diploma in Professional Patisserie and Confectionery

This qualification is suitable for more experienced learners and builds on existing knowledge and skills of cookery to prepare learners for a career as a pastry chef or patissier.

The qualification has 9 mandatory units that will develop specialist patisserie and confectionary skills using a variety of advanced techniques to produce biscuits, cakes and sponges, hot and cold desserts, petit fours, dough and batter products and to display pieces and decorative items. Food safety supervision is also included to ensure learners understand the importance of kitchen organisation and food safety.

Learners who complete this qualification will be able to seek employment as a pastry chef or patissier in a variety of contexts, including:

  • Hotels
  • Restaurants
  • Specialist bakeries
  • Specialist cafes and tearooms
  • Gastro pubs
  • Cruise liners

Entry Requirements: Level 2 Professional Cookery or equivalent. Applications are welcome from those with industry experience in a relevant establishment.

Mental Wellbeing

This course is suitable for HR officers and managers with a responsibility for interpreting and implementing Healthy Workplace initiatives for their employees. It is also appropriate for healthcare professionals such as  register managers, staff nurses in dementia care units and senior care assistants. It critically examines a broad range of models used to explain mental health problems as well as examines the definitions and debates on the nature and classification of mental health and mental wellbeing.

  • Factors and conditions that promote mental wellbeing and resilience
  • Mental health and wellbeing needs of young people
  • Mental health interventions and their effectiveness
  • Roles and responsibilities of service providers

Progression You could study another single topic SUCCESS course or attain a Certificate in Professional development by completing any three modules of your choice. You could also progress to FdSc Community Studies (development and youth work) foundation degree.

Additional Information This course is a module from a Foundation Degree at Truro and Penwith College. It is 20 credit module at Level 5 accredited by Plymouth University.

VTCT Level 3 Certificate in Sports Massage

Students must hold a certificate in A & P, HSE emergency first aid at work (although this can be taken alongside). Designed to provide you with the requisite knowledge, understanding and skills to work as a sports massage practitioner, with non-pathological (non-injured) tissue. Develop the understanding, skills and techniques to plan, prepare for and apply a range of sports massage methods to uninjured clients. Enhance your skills to evaluate massage strategies and methods to inform on future practice. Students are required to complete 50 hours of on-site massage. Students will need to purchase professional uniform, kit, books and towels. Interview required.
