The students, who have each spent the last two years as part of the Rick Stein Academy at Truro and Penwith College, put their new-found talents to the test by creating, preparing, cooking and serving the delicious three course meal for diners including The Seafood Restaurant head chef Stephane Delourme and Stein head pastry chef Stuart Pate.
The menu featured a selection of recipes from Rick Stein’s books that were carefully chosen to showcase the skills that the students had learnt over the year.
The Rick Stein Academy has spent the academic year training full-time students at Truro and Penwith College as well as Apprentices with the Rick Stein Group, developing their knowledge and skills with supplier visits, masterclasses and placements.
The celebration brought together professionals from across the industry who had influenced the young chefs and waiting staff throughout the year, celebrating the success of the team and their graduation from the academy with certificates.
Stephane, who has been at the Seafood Restaurant in Padstow for over 16 years and knows just about everything one needs to know about breaking into the catering industry, presented the graduation certificates and awards.
Jack Stein and executive chef Luke Taylor then spent time with students discussing their next steps and opportunities within the industry.
Hayley McKinstry, Programme Team Leader for Catering at the College, thought the graduation was a fantastic send-off for the students, saying: “The Rick Stein Academy graduation provided the perfect opportunity for the students to showcase their skills and talents to industry professionals that have supported the programme throughout the year. The academy provides enriching experiences for the students that support them in becoming true professionals.”
