2018 Cornwall Apprenticeship Awards Menu

Guests of the 2018 Cornwall Apprenticeship Awards will be treated to a reception, followed by a three course dinner that will be designed, prepared and served by the College's Rick Stein Academy, who will be supported by Nick Evans from the Rick Stein Cookery School. You will choose your starter options when booking your tickets and have an opportunity to highlight any dietary requirements.

Reception

  • Guest’s arrival cocktail with Secret Orchard Cider
  • Bread handmade by the College’s new bakery Apprentices

Starters

  • Cured Cornish dab, wild garlic capers and Penwith foraged herbs (Dish created by Sophie Hooper Senara Restaurant, Penwith College)
  • Coarse Cornish pork & herb terrine, pickles and beetroot chutney (Dish inspired from Rick Stein recipes)
  • Local farm vegetables and root vegetable hummus (Dish inspired from Rick Stein recipes)

Main Course - Cornish table banquet

  • Stevenson Newlyn fish and shellfish pie
  • Terras Farm duck burger, confit and Cornish Gouda
  • Nancarrow Farm hogget, slow roasted over the fire
  • Roast celeriac and boy laity tart
  • Cornish charred potatoes
  • Autumn vegetable salad
  • Beetroot, apple and fennel slaw

Dessert

  • Chocolate, Yallah Coffee chaff, salted caramel, crumble and sorbet
