A host of talented chefs are at the helm of this incredibly successful training restaurant and many of Penwith College’s hospitality alumni go on to work in the country’s top eateries.
Let’s take a closer look at the Senara team that ensures great food, good times and impeccable service are always on the menu.
Jaime Gaspare - Head of Catering & Hospitality at Penwith College, Jaime has over 20 years working as a professional chef and F&B manager. She has worked in restaurants such as Home Bar, Cantaloupe and Fifteen London. Jaime ran her own successful events company before moving to Cornwall to set up the Hospitality department at Penwith College.
Dave Izzard - Chef lecturer Dave’s career has seen him gain experience across the globe. Dave started his culinary journey at the age of 15 working at a restaurant in Penzance. He has also spent time working in France and South Africa.
Dave Williams - Dave is the college’s lead training advisor in Hospitality & Catering. He has been working in the food industry for over three decades, owning and managing his own bakery business. Dave is a master chocolatier and baker.
Justin Ashton - Justin is a chef lecturer and training advisor. He has worked as a professional chef for over 17 years. He had been head chef at The Beach at Sennen and The Lime Tree at Tremenheere Sculpture Gardens and has been awarded Michelin Guide entry.
Dean Bungay - Dean is a training advisor in licensed hospitality and F&B service. He also lectures in wines, cocktails and barista. He has managed bars and delivers training to St Austell Brewery employees. He has won various competitions for barista, wine and spirit work.
Tony Duce - Tony is a training advisor and chef lecturer with 26-years’ experience working with top chefs at 3 Rosette and Michelin-Star level. Tony also worked for the Polizzi family at Hotel Tresanton and now looks after the Steins’ Apprentices.
Mark Lewin - Mark works as a hospitality training advisor and lecturer in hospitality and food & beverage service. He has over 20 years’ experience managing five-star hotels and organising bespoke hospitality events.
Caroline Parsonage - Caroline is a training advisor and looks after internal quality assurance for hospitality, food & beverage service. She is extremely experienced at running hotels and front-of-house teams in restaurants and gastro pubs.
Todd Studley - Todd is our resident forager, part-time chef lecturer and training advisor. He is also the co-owner of the Secret Orchard Cider Company in Somerset and has worked as head chef in a number of restaurants around Cornwall.
Keith Terry - Keith works as a lecturer in professional cookery and patisserie at Penwith College. He is also a training advisor in professional cookery. He has many years of experience as a head chef and is the former owner manager of the Cornish Range seafood restaurant in Newlyn.
Fiona Williams - Fiona is a training advisor for licensed hospitality and food & beverage service. She has managed pubs and led training for Bass Brewery staff since 1986. She is responsible for internal quality assurance within the work-based learning delivery team.
The Senara experience - Enjoy the Senara experience for yourself. The restaurant is open Tuesday to Friday from 12-2pm and Friday nights from 7pm. Booking is recommended to avoid disappointment.
